Easy Delicious Pasta with Sardines and Veggies
Ingredients
- 1 pack Pasta Any pasta of your choice
- 3 cans Sardines remove excess oil before adding
- 1 Onion chopped
- 2 Tomatoes diced
- 1 Bell pepper sliced
- 2 cups Spinach chopped
- 1 Parsley chopped
- 3 cloves Garlic minced
- 1 tsp Black pepper
- 1 tsp Salt
- 1 tbsp Olive oil for sauteeing vegetables
Instructions
Cook the Pasta
- Begin by cooking the pasta according to the package instructions. Once done, drain and set aside.
Prepare the Vegetables
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic. Sautee until the onion becomes translucent and the garlic is fragrant.
- Add the bell pepper slices and diced tomatoes to the skillet. Cook for about 5-7 minutes, until the vegetables are tender.
- Toss in the Spinach and chopped parsley, cooking just until the spinach wilts.
Add the Sardines
- Drain the excess oil from the can of sardines. Gently add the sardines to the skillet with the sauteeed vegetables.
- Stir carefully to combine, heating enough to warm the sardines without breaking them apart.
Combine with Pasta
- Add the cooked pasta to the skillet with the sardines and vegetables. Mix everything together thoroughly.
- Season with salt and black pepper to taste.
- Once everything is well combined and heated, remove it from heat. Serve the pasta hot, garnished with additional parsley if desired.
