This Chicken Drumstick Soup is easy to make, hearty, with the meat falling off the bones, and incredibly delicious and nourishing.

Ingredients
  

  • 4 to 6 chicken drumsticks
  • 1 onion, chopped
  • 2 to 4 carrots, peeled and sliced depending on the number of chicken drumsticks you will use and the size of the carrots
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/2 teaspoon turmeric
  • 1 tablespoon tomato paste for the color, optional
  • 6 cups water- Salt and pepper to taste

Instructions for Instant Pot:

  • Start by roasting the chicken drumsticks on the sauté function in the Instant Pot until they are golden brown on all sides. This will help enhance the flavor of the soup.
  • Add the chopped onion, sliced carrots, minced garlic, ginger, turmeric, and tomato paste to the Instant Pot. Stir well to combine.
  • Pour in the water and season with salt and pepper to taste.
  • Lock the lid in place and set the Instant Pot to pressure cook on high for 15 minutes.
  • Once the cooking cycle is complete, allow the pressure to release naturally for a few minutes before carefully quickly releasing any remaining pressure.
  • Serve hot and enjoy!

  • Begin by roasting the chicken drumsticks in a large pot over medium-high heat until they are golden brown on all sides. This step will add depth of flavor to the soup.
  • Add the chopped onion, sliced carrots, minced garlic, ginger, turmeric, and tomato paste to the pot. Stir well to combine.
  • Pour in the water and season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce the heat to low and simmer for about an hour until the chicken is cooked through and tender.
  • Serve hot and enjoy!
