This delicious and healthy chicken salad is easy and fast to make. If you have roasted leftover chicken, it would be even faster.
I have used store-bought mayonnaise for this recipe because I run out of homemade mayonnaise. But I make sure I buy the healthiest mayo that is made from only egg and avocado oil.
I will prepare a blog post soon for my recipe of homemade mayo. If you happen to be buying this time like me, buy this avocado oil mayo (Costco carry this brand) instead of processed vegetable oil and full of sugar mayo.

If you don’t want to use mayo or are allergic to eggs, you can use whole milk Greek yogurt.
If you want to avoid both eggs and yogurt, you can make an avocado-based substitute by blending avocado with a bit of apple cider vinegar and olive oil.
How to Make Chicken Salad
- Dice and slice – First, dice up chicken breast into smaller pieces. Then dice the onion, garlic, bell peppers, and avocado. Finely slice the cabbage and carrots.
- Roast – Roast the diced chicken breast together with onion and garlic. And season with a bit of salt and pepper.
- Mix – Add all the ingredients to a large bowl, add the mayo, season with a bit of salt and pepper, and mix everything until it’s well combined. Then you’re done!
Chicken Salad Variety and How to Serve
- Add nuts – You can add almonds, pecans, or Brazilian nuts.
- Mix up fruits – Apples or strawberries, or dried cranberries can be great.
Mostly, we eat this chicken salad by spoon straight from the bowl. But you can make a sandwich using slices of bread or rice cake. Also, you can turn it into a wrap with your choice of tortillas.
Delicious and Healthy Chicken Salad
Ingredients
- 1 large chicken breast (or two small size)
- ½ medium-size green/purple cabbage
- 1 large carrot
- 1 avocado
- 2-3 different color Bell peppers
- ½ medium size onion
- 2 garlic cloves
- 1 lemon
- 2 tbsp olive oil
- 2 tbsp mustard
- ½ cup mayonnaise or whole milk Greek yogurt
- 2 tbsp buffalo sauce (optional)
- 1 tsp salt
- 1 tsp black pepper
Instructions
To Roast Chicken Breast
- Dice up chicken breast, onion, and garlic into small pieces.
- On a pan, add olive oil, the diced chicken breast, onion, and garlic together. Roast it until the chicken starts to turn slightly brown. Remove the chicken and let it rest for a few minutes to cool down.
Chicken Salad Recipe
- Slice and dice the cabbage, carrot, bell pepper, and avocado.
- Add the ingredients to a large mixing bowl along with the mayonnaise, mustard, buffalo sauce and lemon juice – season with salt and pepper.
- Mix everything until it's well combined and serve.
