Chechebsa is a classic breakfast dish in Ethiopian cuisine. Chechebsa is mainly made from thin flatbread called Kita. The typical Chechebsa is flavored with Berbere & Kibe (clarified butter). Here I am sharing a Chechebsa that is flavored with cinnamon.
The best thing about this recipe is that it is easy and quick to make. You can’t possibly go wrong. Plus, it requires a few ingredients you may already have on hand. Also, it can be served as a snack like our grain free granola.
It is versatile, and you can eat it with yogurt, goat cheese, or topped with egg and drizzled honey.
Cinnamon Chechebsa is a favorite breakfast dish in our house. Our kids enjoy eating it. Our oldest even asks for it from time to time. It is savory and soft, perfect for kids. Mostly, we like to eat it with scrambled eggs on top, together with soft goat cheese.
Chechebsa can be easily adapted to vegan and gluten-free options. Butter can be substituted with oils, and gluten-free flour works to make flatbread (Kita).
Ingredients You Need to Make Cinnamon Chechebsa with Scrambled Eggs
- Flour – wheat flour is usually used to make Chechebsa, but you can use any flour of your choice. Teff and other gluten-free flours would work. You can also mix different flours to enhance the nutritional content.
- The only thing required from you is to know the flour’s character and how to make a flatbread from it.
- The standard tip is to add a little bit of water when making the batter and get the right consistency you look for to make the flatbread (Kita) on the pan.
- The other tip is to use a little oil or butter on the pan to prevent the flatbread (Kita) from sticking.
- The final tip is to use the back of a spoon to thin the flatbread while cooking.
- Water – to mix it with flour and make the batter of the flatbread (Kita)
- Salt – for taste
- Cinnamon – for delicious flavor
- Butter – to make cinnamon butter mix and coat the flatbread (Kita)
- Baking soda – it is optional, but it makes the flatbread (Kita) fluffy.
- Vanilla extract – for an additional flavor boost. It is entirely optional.
- Toppings – scrambled eggs, goat cheese, honey, and berry fruits are all nice on top. You can add one or more from the options depending on your choice and what you have on hand.

Cinnamon Chechebsa with Scrambled Egg (የቀረፋ ጨጨብሳ በእንቁላል ፍርፍር)
Ingredients
- 1 cup Whole Wheat Flour
- 1 tsp Baking Powder እንደ አስፈላጊነቱ
- 1 tsp Salt
- 1 tsp Vanilla extract እንደ አስፈላጊነቱ
- 1 tbsp Cinnamon powder
- ½ cup Maple syrup
- ½ cup Water
- ½ cup Butter salted or unsalted, melted
- 3 Eggs
- 1 tbsp oil
- 2 tbsp Goat cheese እንደ አስፈላጊነቱ
Instructions
How to make cinnamon butter mix
- Melt butter in a small saucepan on low heat. Alternatively, you can use a microwave, or you can put the bowl in a hot water.
- Add cinnamon powder and maple syrup, and mix it well. Set it a side.
Scrambled Egg
- Heat oil in a pan over medium heat until hot. Pour the eggs.
- Break and beat eggs with a pinch of salt in a bowl
- As the egg begins to set, scramble it with a spoon.
- Continue cooking until no liquid egg remains. Remove from heat.
How to make flatbread (Kita)
- Mix the flour, baking soda, salt, and vanilla extract in a bowl.
- Add water and mix for few minutes until it combines. The batter should be thin, like pancake batter.
- Heat a pan on the stovetop on medium-high heat and grease with a small amount of butter
- Pour the batter into the pan and spread it with the back of a spoon. Let it cook for a couple of minutes until the edges of the KIta turn golden brown.
- Flip it and continue cooking until brown on both sides.
- Cool the flatbread (Kita) and cut it into small pieces. Set it aside in a bowl.
- Pour over the cinnamon butter mix on the Kita and mix it well with a spoon until the Kita is evenly coated.
- Add scrambled eggs or your other favorite topping on top and serve.
